Yellow tea is a rare traditional Chinese tea that sits between green tea and white tea in processing style. Its unique character comes from a special step called "Sealed Yellowing" (Men Huang 闷黄), which creates a smoother, sweeter, and less bitter flavor. After heating, the warm tea leaves are wrapped or lightly covered while still slightly moist and warm, then rested for several hours or even days — chlorophyll partially breaks down, bitterness and astringency are reduced, and soft sweet aromas begin to develop.
